¾ cup rice (pearl rice)
1 litre milk
Sprinkle of salt
Cook at least 1 hr very low, stir often.
Cool rice completely before mixing with whip cream.
Whip ½ litre cream fairly stiff.
Mix together whip cream, cold rice, almond flavoring and course ground almonds (1/4 cup). Refrigerate after mixing.
Serve with warm Cherry sauce (cherry pie filling works well for this).
When serving for Christmas Dinner, hide a whole almond in the bowl (or in one small bowl if dishing up individual servings) and whoever finds the almond in their serving, conceals this fact until everyone is finished their serving. The person who has the almond in their serving wins a prize.
