16 hard boiled eggs (cooked for 12 minutes) quartered when cool (place a side for topping on individual salad servings)
Salad Ingredients:
4 herring tidbits (1 cup) cut into 1-inch pieces
6 large apples cut into ¼ in cubes
2 lbs celery chopped
6 onions finely chopped
1 ½ litres mayo – mixed with mustard and curry powder to taste
½ litre whipped cream
Combine the above ingredients in a large bowl and mix gently. Place herring salad in individual serving bowls and top with egg quarters and parsley.
