500 gm potatoes boiled in their skins.
Cool potatoes and peel away skin. Cut potatoes into bite size pieces and place in large bowl.
Mix together well:
¼ cup oil
¼ cup water
¼ cup vinegar
½ onion – finely diced
1 tbsp sugar
¼ tsp salt
¼ tsp paprika
Pour marinade over cut potatoes and mix well. Refrigerate for a minimum of 30 minutes. Sprinkle with finely chopped parsley before serving.
Tomatoes, cucumbers and hard-boiled eggs can also be added to this salad.
